
This zucchini "marinara" is the perfect summer side dish!! It's made with summer zucchini and simmered in Daylight Veggie Pasta sauce for a veggie-packed side.
INGREDIENTS
- 2 medium zucchinis
- Salt
- 1 ½ tbsp olive oil
- ½ cup Daylight Veggie Pasta Sauce
- Fresh basil
- Goat feta cheese (optional, omit for AIP)
INSTRUCTIONS
- Slice the zucchini into half moons and lightly salt. Allow to sit for 5 minutes and pat dry to remove the excess water.
- Using a large pan, heat the oil over medium-low heat. Once the oil is shimmering, add the zucchini in a single layer and allow to sear for 3-4 minutes on each side or until lightly browned.
- Turn the heat down to low and pour in the Daylight veggie pasta sauce. Stir to coat and simmer on low for 3-4 minutes.
- Serve as a summer side dish topped with fresh basil and cheese if desired!
