
Pasta Burger Bowls!!! How is this not a thing yet?! Itβs so easy and still satisfies my pasta cravings π
π Ingredients
For the burgers
- 1/2 lb ground chicken (sub ground turkey)
- Salt & pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 1/2 tsp dried parsley
- 1/2 tsp dried basil
- 1/4 cup Daylight Veggie Pasta Sauce
- 2 oz shredded goat mozzarella cheese (optional)
For the pasta bowl
- 4 oz cooked gluten-free pasta
- Splash of pasta water
- 1/2 cup Daylight Veggie Pasta Sauce
- 2 cups arugula
- Balsamic vinaigrette dressing of choice
π instructions
-Combine the ground chicken with the salt, pepper, garlic and onion powder, parsley and basil and gently mix in. Form into two burgers (or three smaller burgers) and set aside.
-Heat a large pan over medium heat (or outdoor grill), and grease well with avocado oil. Add the burgers and cook for about 5 minutes on each side, or until the internal temperature reaches 165 F.
-Turn down the heat and add 2 tbsp of Daylight Veggie Pasta Sauce on each burger. Top each burger with 1 oz of shredded cheese (if using). Cover the pan to allow the cheese to melt for about 2 minutes. Remove the cover and set the burgers aside.
-Prepare the pasta by combining the cooked pasta with a splash of pasta water and Daylight Veggie Pasta Sauce. Stir to combine and coat the pasta.
-Serve the bowl by diving the pasta between the two bowls, adding the cooked burgers, and arugula topped with Balsamic vinaigrette dressing!
