
Pasta… on a stick? Trust me, it's about to become your new favorite!!
Serve it as an appetizer at gatherings for a huge crowd-pleaser, and ditch the bowl to mix up pasta night. This version is made with GF pasta and nightshade-free sauce!
Ingredients
- 2 oz gluten-free penne, dry (I use the brand jovial)
- 1 tsp olive oil
- 5-6 tbsp Daylight Veggie Pasta Sauce
- 3 tbsp shredded mozzarella cheese
- 2 tsp parsley, chopped
Instructions
- Prepare 2-3 wooden skewers by soaking in water. Set aside.
- Bring a small pot of well salted water to a boil. Add the pasta and cook according to package instructions. Strain and rinse. Lightly coat with olive oil to prevent sticking.
- Preheat the oven to 350 F and line a baking sheet with parchment paper. Lightly grease.
- Dab the skewers dry and begin to thread the pasta through the skewers.
- Add the pasta skewers to the baking sheet, topping each skewer with roughly 2 tbsp of Daylight Veggie Pasta Sauce each. Top the skewers with mozzarella cheese.
- Transfer to the oven and bake for 5 minutes, or just until the cheese melts.
- Remove from the oven and top with chopped parsley. Serve fresh!
